Ingredients for the Turkey Jerky

Hot sauce, vinegar, garlic, onion and ground spices
Garlic, warm spices and a dash of heat give turkey something new to do.

Turkey for Our Jerky

For my recipe, I bought it at Weis for $5.35/per 1 lb.

Thin raw turkey cutlets stacked on a board
Thin cutlets make it easier to prepare strips of a consistent thickness.

I weighed the turkey to determine how much jerky would be left after the dehydration.

Turkey is hard to slice when it is not frozen. It can be hard to cut if the turkey is too soft or too cold, so you can put it in the freezer for a while ( 1 – 2 hours) so that it is easier to slice.

Cut evenly sized strips so they dry at a similar rate.

Marinade for Turkey Jerky

Gathering everything together and preparing the marinade is the next step. The ingredients mentioned above must be combined in the correct proportions.

See the measuring cup below.

Dark liquid in a glass measuring cup
Get the liquids together, then invite the garlic and spices into the mix.

Now combine the turkey and marinade, and let it sit for six to twenty-four hours. The flavor of the turkey gets greater the longer it is marinated.

Dehydrating Turkey

After marinating the turkey, the paper towel(s) will absorb any extra liquid.

Blot excess surface liquid before loading the trays.

You can use aan oven or an electric smoker, but a dehydrator is preferred because it is easier to use and less expensive. On Amazon, you could purchase one.

  • Dry your jerky evenly without the hassle of rotating trays.
  • Keep your oven free for dinner while your next batch of jerky dries.
  • Make a bigger jerky stash by expanding to twelve trays. Extra trays are sold separately.

Arrange a single layer with enough room for air to reach each strip.

The turkey should be dried for 5 to 7 hours at 160 degrees F. It took 6 hours for our hand-cut slices to reach the ideal level of crispiness. If you choose to dry at lower temperatures, be careful to modify your drying time to account for the temperature drop. Plan on 7 hours of drying time at 145 degrees Fahrenheit and 10 hours of drying time at 125 degrees Fahrenheit.

About the Author

In 2017, a good friend introduced me to the most amazing beef jerky I had ever tasted. And his source was from the most unexpected of places--a random guy in Thailand whom he had met while living there. Although I had been eating jerky since as far back as I could remember, I was genuinely blown away by the flavor. I realized the best beef jerky doesn't come from a store. This experience inspired me to create Beef Jerky Hub and put into writing all the things I've since learned about this amazing food. If you're interested, you can read more about my story here.
