Wild Bill’s Beef Jerky

Jerky is one of the best snacks to grab when you’re on the go. It travels well, doesn’t need refrigeration, and gives you a solid dose of protein without taking up half your bag. Beef jerky can also provide iron, so it’s a much more satisfying option than reaching for chips or candy when hunger hits.

And when it comes to old-school jerky, Wild Bill’s has been doing things its own way for decades.

This isn’t the soft, sugary stuff that practically dissolves in your mouth. Wild Bill’s is smoky, salty, tough, and unapologetically traditional.

That’s exactly why I like it.

From Butcher Shop to Jerky Staple

Wild Bill’s story goes all the way back to 1955, when the business started as Balwell’s Butcher Shop in Pennsylvania.

At the time, the shop built its reputation around fresh, high-quality meat. Word got around, and Balwell’s became a local favorite.

In 1983, the company started branching out into beef jerky and other meat snacks. A few years later, it adopted the Wild Bill’s name and became especially well known for something that’s still closely associated with the brand today: jerky packed into big mason-style jars.

That old-fashioned presentation helped Wild Bill’s stand out, and before long, its jerky was being sold throughout the northeastern United States.

In 2009, Wild Bill’s was acquired by Monogram Foods, a major meat snack manufacturer. The operation eventually moved to Martinsville, Virginia, but the brand has continued to stick with the traditional smoking methods that helped make it popular in the first place.

Wild Bill’s jerky is still hand-strung and smoked in a smokehouse.

And honestly, you can taste the difference.

More Than Just Beef Jerky

Beef jerky is still the main attraction, but Wild Bill’s offers quite a bit more than the classic strips.

You’ll also find bacon jerky, pork belly bites, and jerky chew, along with several different flavors and package styles.

The jerky in a jar is probably the product most people associate with Wild Bill’s. There’s something fitting about pulling long strips of smoky beef out of a big jar instead of tearing open another little plastic bag.

It looks old-school because it is old-school.

Wild Bill’s also makes jerky chew, which is basically its whole-muscle smoked jerky shredded into fine pieces and packed into a small tin.

It’s easy to carry, easy to snack on, and a nice option if you want the flavor of traditional jerky without working your way through a full strip.

Why This Jerky Actually Tastes Smoked

This is where Wild Bill’s really separates itself from a lot of mainstream jerky brands.

What I love most about it is that it actually tastes authentic.

There’s a deep smoky flavor to it, and the texture feels like something that genuinely spent time in a smokehouse rather than something engineered to stay soft in a convenience-store bag for months.

Wild Bill’s uses top-round beef that’s seasoned, hand-strung, and slow-cooked in a smokehouse.

The finished jerky is dry, firm, salty, and smoky.

In other words, it’s jerky.

Real jerky.

It isn’t trying to be tender enough to eat with a spoon.

You actually have to chew it, and I mean that as a compliment.

The texture is one of my favorite things about Wild Bill’s. It’s tough without being rubbery, dry without tasting stale, and chewy without feeling gamey.

There’s something satisfying about jerky that fights back a little.

For me, that texture makes it feel much closer to the kind of jerky you’d expect from a butcher shop or roadside smokehouse than the soft, heavily sweetened stuff you see from a lot of bigger brands.

Which Wild Bill’s Flavor Should You Try?

Wild Bill’s offers several flavors depending on what you’re in the mood for.

You’ll commonly find varieties such as Original, Hickory Smoked, Peppered, and Teriyaki.

If you want the classic Wild Bill’s experience, Hickory Smoked is hard to argue with. It really leans into the smoky, salty flavor that defines the brand.

Peppered adds a little more bite, while Teriyaki brings some sweetness into the mix without completely burying the beef flavor.

And then there’s bacon jerky.

I haven’t tried every bacon variety they’ve released, but anything involving maple and bacon in jerky form immediately gets my attention.

Who decided jerky couldn’t be breakfast?

This Isn’t Soft Convenience-Store Jerky

There’s no shortage of beef jerky on store shelves these days.

The problem is that a lot of it tastes surprisingly similar.

Soft.

Sweet.

Moist.

Sometimes so tender that you almost forget you’re supposed to be eating dried meat.

Wild Bill’s goes in the opposite direction.

It’s salty. It’s smoky. It’s dry. It has some toughness to it.

And that’s exactly what makes it memorable.

I don’t want every piece of jerky to feel like I’m chewing leather, but I also don’t want it to have the texture of a fruit snack.

Wild Bill’s lands much closer to what I think traditional jerky should be.

After you’ve eaten jerky with this kind of smokehouse character, some of the softer supermarket brands can start tasting a little lifeless by comparison.

That doesn’t mean everyone will prefer it.

If your favorite jerky is extremely tender, moist, and sweet, Wild Bill’s probably won’t suddenly convert you.

But if you like jerky that tastes like beef, smoke, salt, and seasoning, this is the kind of stuff that makes sense.

Who’s Going to Love Wild Bill’s?

For fans of traditional jerky, Wild Bill’s is absolutely worth trying.

The brand has a distinctive style, and it doesn’t seem interested in changing that just because softer jerky has become popular.

I respect that.

The smokehouse flavor comes through clearly, the beef has plenty of character, and the firm texture makes every piece feel substantial.

The classic jars also give Wild Bill’s a little personality that you just don’t get from another generic resealable bag hanging on a gas-station rack.

Is it the perfect jerky for everybody?

Probably not.

Some people are going to find it too tough or too salty.

But that’s part of the appeal.

Wild Bill’s knows exactly what kind of jerky it wants to make.

And if you happen to like that same style, it’s very easy to understand why the brand has stuck around for so long.

The Bottom Line: Old-School Jerky Done Right

Wild Bill’s feels like a throwback to a time when jerky was supposed to be tough, smoky, salty, and made for chewing.

The company has come a long way from its Pennsylvania butcher-shop beginnings, but the basic idea behind the product hasn’t changed much: start with good beef, season it well, smoke it properly, and don’t overcomplicate things.

There aren’t many gimmicks here.

Just delicious smoked meat.

And after eating enough overly soft, overly sweet jerky, sometimes that’s exactly what you want.

In 2017, a good friend introduced me to the most amazing beef jerky I had ever tasted. And his source was from the most unexpected of places--a random guy in Thailand whom he had met while living there.
